      • Observation(s): Cloth towel being used to dry dishes. Ensure all dishes are washed, rinsed and sanitized and then allowed to air dry. Chemical dishwasher has acceptable concentration of chlorine. ***Start monitoring the chlorine concentration (whenever the dishwasher is in use) with test strips (want between 50-100ppm) and record in logbook. Surfaces are sanitized.

      • Observation(s): -Dishwasher: rinse was not reaching greater than 50ppm, professional company that is retained to maintain the dishwasher was called at the time of inspection. In the interim, dishes can be washed/rinsed in the dishwasher and then manually sanitized in one of the sinks in a 100ppm bleach solution for 2 minutes and then air dry. Please have the service man call me when the dishwasher has been serviced. Operator had phoned on September 24, 2014 confirming that the dishwasher is now reaching greater than 50ppm bleach for the sanitize cycle.
