- 04. Does the operator use approved methods for cleaning and sanitizing equipment, utensils, and surfaces?
- 1) Stock sanitizer solutions (chlorine based and quat based) were observed during the inspection.However prepared or diluted sanitizer solution was not available for sanitizing equipment and food contact surfaces.Note: Staff onsite was not aware about the required concentrations and testing requirements for sanitizer solution.2) Staff mentioned that facility has chlorine test strips but were inaccessible during the inspection.Make sure that sanitizing solution (100 ppm for chlorine solution and 200 ppm for Quatz based solution) must be available for equipment sanitization on routine basis.Make sure to test the sanitizing solution on frequent basis.
- 08. Do food handlers ensure that food is protected from contamination (unless noted elsewhere)(Non-Critical)?
- Following observations were made regarding food storage conditions:1) Slushy syrups were stored under the sink near the garbage can.2) The pre-packaged items were stored randomly in the back storage area, there was no separation between the food and non-food items.1) Make sure to organize the dry food storage area.2) Food must be stored away from non-food items like laundry, personal use items and garbage can etc.
