- Four large bags of mozzarella cheese were seen thawing on the counter and temperature recorded at 8.5 C.Make sure frozen high-risk items are thawed in the refrigerator or under a steady flow of cold running water.When questioned, staff stated that these two food items had been removed from the freezer 90 minutes prior.The manager and PHI discussed the proper thawing methods. Staff returned 4 bags of cheese products to the cooler. A guidance document on safely thawing and cooling foods was provided to the operator (via separate email)
