      • Reviewed manual dishwashing procedures at the time of inspection.Discussed that dishes must be sanitized with a 200 ppm concentration of quats after they have been washed and rinsed with a minimum two minute contact time.

    • 10. Are food temperatures during storage and processing being controlled to maximize food safety?
      • Meatballs in marinara sauce in a hot holding unit were measured at 48C after 45 minutes of heating. Once notified, a staff member increased the temperature of the hot holding unit and the meatballs were subsequently measured at ~60C at the end of the inspection.
