      • The dishwasher remains out of order.Single-use cutlery is being provided to customers.Please contact me once the dishwasher has been repaired or replaced to confirm that it is functioning properly.In the meantime, manual dishwashing is being conducted using a two-compartment sink. QUAT sanitizer and QUAT test strips are available and in use.

      • Acidified sushi rice - pH testing strips were present on site, and the pH measurement was 4.9.It was mentioned that incorporating required amount of vinegar is necessary to achieve a pH of 4.6 or lower to ensure the sushi rice is safe for storage at room temperature.
