      • Observation: (CORRECTED DURING INSPECTION) The cutting boards have knife marks and are discolored. (Public Health Significance) - knife marks can retain food residues and is hard to clean and disinfect, promoting the growth of bacteria. Discolored knife marks may indicate the presence of bacterial biofilm that can contaminate foods.
      • Corrective Action: Operator stopped using the cutting boards. Operator to ensure cutting boards are smotth in surface and in sanitary condition at all times.
