- Chlorine sanitizing dishwasher measured 0ppm chlorine. Dishwasher reached 67 degrees Celsius during cycle. To ensure sanitization, dishwasher must either dispense 100ppm chlorine or reach 71 degrees Celsius at plate level.
- 21. Is the facility properly constructed and maintained in a state of good repair to allow for the safe and sanitary handling of food?
- There were small pieces of unfinished wood by pizza prep area. Paint/finish so that they are non-porous and easy to clean.

- Chlorine sanitizer spray bottle measured greater than 200ppm. Ensure chlorine sanitizer is mixed to 100ppm to prevent chemical contamination of food.

- 1. Mechanical dishwasher was not dispensing chlorine. Repair and ensure dishwasher dispensing 100ppm chlorine. 2. Staff were not following two compartment dishwashing method for manual dishes. Ensure dishes are sanitized by submerging in 100ppm chlorine solution. (Poster attached in email).

- There is drywall missing and damaged drywall on wall beside pizza oven. Ensure area is repaired so that wall is smooth and easy to clean. Operator plans to install metal panel in this area.
