    • 10. Are food temperatures during storage and processing being controlled to maximize food safety?
      • ** - cooler was measured at 14'C, should maintain a temperature of less than 4'C. Cooler contained milk and whip cream which was relocated during the inspection. Should this cooler be required for dairy and other high risk food storage, repair will be required.
    • 11. Are there adequate and properly operating dish washing facilities to effectively clean and sanitize equipment and utensils (unless noted elsewhere)(Critical)?
      • ** - dishwasher exhibited thick scale and calcium build up. The dishwasher was not sanitizing at 74'C at the plate. Temperature stayed consistent at 58'C (hot water tank temp), booster was not working or was not engaging or the spray arms were clogged by scale. PHI observed no rinse agent was connected to the machine (not required under the Regulation) that may have been a factor in the scale building up in such a thick manner.
    • 13. Are properly operating hand washing sink(s) accessible to food handlers, located in suitable areas, and stocked with appropriate hand washing supplies?
      • ** - back handwashing sink was blocked from frequent and proper handwashing. A large chaffing pan was stored in the dirty handwashing sink. Cease and desist the practice of storing any items in the handwashing sink at any time.
    • 21. Is the facility properly constructed and maintained in a state of good repair to allow for the safe and sanitary handling of food?
      • ** - the compartment sink faucet was leaking water - please repair.
    • 22. Are utensils and equipment maintained in a condition and a manner that ensures the safe handling of food?
      • ** - knives were improperly stored in an unsanitary manner between countertops. Fryer baskets were stored in contact with dirty air filters (wall). Please cease and desist

      • ** - a build up of grime was observed on the following items that includes but is not limited to: front handwashing sink (mold-like substance around the faucet), the exterior of the toaster, grey shelf in the w/in freezer, soup/gravy canteen holds.

    • 05. Do food handlers refrain from handling food while ill and have acceptable attire and hygiene?
      • ** - PHI observed manager washing hands and then using dirty aprons to wipe their hands dry. Unacceptable, paper towel is required.
    • 13. Are properly operating hand washing sink(s) accessible to food handlers, located in suitable areas, and stocked with appropriate hand washing supplies?
      • ** - hand sink in the back kitchen was lacking paper towel and soap. Must be supplied with soap and paper towel at all times. Touching the doors to enter a different room to wash hands is not acceptable.
    • 23. Is the facility maintained in a clean and sanitary condition?
      • ** - build up of grease, grime, and food were noted on/in the following items/areas: walls and ceilings in the back kitchen and dishwashing area, the child high chairs, the baby change tables, the doors/door edges of the walk in cooler and freezer, the ice cream chest freezer in the front kitchen.

      • 2024-02-22Operator stated the gasket has been ordered. Operator to email photos of installed gasket once completed. __________________________2024-02-16Gasket (rubber seal) on meat drawer cooler was in disrepair. ACTION REQUIRED: Repair and/or replace the broken gasket. Monitor all coolers to ensure they are in good repair.

      • Faucets at the hand sinks were wobbly and not firmly secured to the countertop. ACTION REQUIRED: secure hand sink faucets to the counter.
    • 22. Are utensils and equipment maintained in a condition and a manner that ensures the safe handling of food?
      • Cups were being used as scoops in dry storage bins and were stored in the bins when not in use. ACTION REQUIRED: discontinue re-using cups as scoops. Do not store scoops in bulk product when not in use.

      • Gasket (rubber seal) on meat drawer cooler was in disrepair. ACTION REQUIRED: Repair and/or replace the broken gasket. Monitor all coolers to ensure they are in good repair.

      • Some general dirt build-up in out-of-the-way areas such as behind and around the dishwashing area, under the pop syrup storage, etc. ACTION REQUIRED: perform deep clean under & behind equipment.
