    • 10. Are food temperatures during storage and processing being controlled to maximize food safety?
      • ** - copious amounts of raw meat were stored at room temperature in the back kitchen. Some of it thawing. The external temperatures ranged from 15-20'C. The meat was probed to determine what actions to take with the meat - the internal temperatures were 4-6'C. PHI had all foods placed back in the cooler to reset external temperatures. Please train staff to only take out the high-risk food that they will immediately work on from freezers and coolers. Lining up high risk food tasks for convenience of location cannot be done.

      • ** - many chemical spray bottles were not labeled to denote the chemical within to prevent potentially dangerous mixing of chemicals.

      • ** - 4 drawer under cook top cooler was warm, around 9-10'C, should be 4'C or less. The drawer appeared to have a bent track the drawer would not remain closed.

      • ** - 3x handwashing sinks were blocked from access to conduct regular and frequent handwashing. Do not block handwashing sinks.
