- ** - copious amounts of raw meat were stored at room temperature in the back kitchen. Some of it thawing. The external temperatures ranged from 15-20'C. The meat was probed to determine what actions to take with the meat - the internal temperatures were 4-6'C. PHI had all foods placed back in the cooler to reset external temperatures. Please train staff to only take out the high-risk food that they will immediately work on from freezers and coolers. Lining up high risk food tasks for convenience of location cannot be done.
