- 1. A tray of eggs was stored at room temperature. It was placed into fridge during the inspection. 2. A cart with several boxes of uncooked fries was at room temperature. This was wheeled into walk in cooler during the inspection. High risk foods must be stored under temperature control. Minimize time high risk foods spend in danger zone (4C-60C).
- 13. Are properly operating hand washing sink(s) accessible to food handlers, located in suitable areas, and stocked with appropriate hand washing supplies?
- Hand sink beside prep cooler across from grill was broken. Operator had been in contact with plumber and had plans for repair. Ensure hand sink is repaired.

- Containers of raw hamburgers were stored above sauces in the walk-in cooler. Ensure raw meat is stored on lower shelves to prevent cross contamination on to ready to eat foods.
- 22. Are utensils and equipment maintained in a condition and a manner that ensures the safe handling of food?
- 1. Used knife was stored in crevice between prep coolers. This is not a sanitary way to store knives as crevice is not cleaned regularly.2. A plastic cup was used as a scoop in spice mix. Either clean and sanitize cup between uses or use scoop with handle to ensure bulk food is not contaminated.
