      • Observation (CORRECTED DURING INSPECTION): Quats sanitizer pails were less than 200ppm. Solution was prepared approximately 1 hour ago.
      • Corrective Action(s): Quats sanitizer must be maintained at 200ppm to properly sanitize food contact surfaces. Quats sanitizer dispenser was tested at 200ppm after running for a short period of time. Operator recommended to contact technician to determine the cause for the delayed flow of sanitizer. Sanitizer pails were refilled and tested at 200ppm.

      • 1. Previously washed and sanitized vegetable slicer in storage had food debris on them.
      • 2. QUATs sanitizer in pails at the front and back area had concentration of less than 200ppm.
      • Corrective Actions:
      • 1. Food debris can harbor pathogens which can contaminate foods when the vegetable slicers are being used. Staff washed and sanitized all the vegetable slicers during inspection.
      • 2. QUATs sanitizer needs to be minimum 200ppm to effectively sanitize food contact surfaces and equipment/utensils. Staff replaced QUATs sanitizers in front and back area. Advised to always run QUATs dispenser for a moment and test it before filling containers.

      • 3) Blender containers are sanitized at the end of the night.
      • Corrective Action(s): 1) Ensure all equipment is properly washed and sanitized after each use to prevent potential cross contamination. Retrain staff on cleaning and sanitizing procedures.
      • 2) Quats sanitizer at 200ppm is required to properly sanitize food contact surfaces. Pot and pan detergent is not food grade and may result in chemical contamination.
      • 3) Blenders must be sanitized after each use or every 2 hours if used throughout the day.
