Meat was being shaved and stored on the lip of the oven and was held at roughly 50 degrees Celsius. - It must be second cooked to 74 degrees Celsius and then can be stored in the cooler.

Operator must develop a plan for approval before starting construction of a new food business or before making any major alterations to an existing food establishment.Major alterations include addition or changes to the physical facility, adding major equipment or changes to the plumbing or ventilation systems.

      • Pizza prep cooler had ice on top while the bottom is >4C. Observed the cooler was switched off for cleaning and operator forgot to switch-on. Please remember to keep all the coolers with food in good working at all times. Corrected during inspection.
