      • Observation (CORRECTED DURING INSPECTION): Equipment not properly sanitized. Sanitized equipment needs to be air dried for proper contact time.
      • Staff stated equipment was sometimes wiped dry with paper towels. Equipment also observed to be stacked while wet.
      • **Corrected during inspection** All wet-stacked equipment is to be rewashed and sanitized and left to air dry.

      • Observation: Cut room handwashing station not equipped with soap dispenser.
      • Corrective Action(s): All handwashing stations need to be equipped with hot/cold running water, liquid soap and paper towels.

      • Observation: Insufficient space for proper equipment drying. This could lead to bacterial or mould growth on equipment and can contaminate food.

      • 2. Install additional racks for proper drying of all equipment.

      • Observation: Condensation and ice formation observed in walk in cooler and freezers.

      • Ensure foods are not stored where condensation and ice is formed or dripped on.

      • Observation: 1) Small containers (used as scoops with no handles) were stored in the marinating sauce buckets both in processing room and walk-in cooler.
      • 2) Handwash station in the processing room is located close to the food prep area that can result in food contamination from water droplet spill/splash during handwashing.
      • Corrective Action(s): Ensure that food is stored, processed and handled in a manner that prevents the risk of contamination.
      • 1) Do not leave small containers in the buckets. Store them outside in a sanitary condition.
      • TO BE CORRECTED BY - Immediately
      • 2) Install a splash guard between the handwash station and food prep table to prevent water splash.

      • Observation (CORRECTED DURING INSPECTION): 1. Knives placed inside knife holder were in poor sanitary condition, with built-up grime and fat.
      • 2. No quats sanitizer spray bottle available on-site / sanitizing pail.
      • 3. A dirty cloth was noted under the table, soiled with debris.
      • 3. Trays that were washed and sanitized were stacked on each other, trapping built-up water. All trays MUST be air-dried after being cleaned and sanitized.
      • Corrective Action(s): 1. Knives and trays were re-washed and sanitized. Trays were placed on the sloped drying area (staggered for air-drying).
      • 2. A container was designed as a 'sanitizing pail' to store cloths inside.
      • It is essential that you exercise proper cleaning and sanitizing procedures according to your sanitation plan prescribed by Freshco Chalo.
