      • -The high‑temperature dishwasher is not achieving the required sanitizing temperature of 71°C at the dish level, even after four consecutive cycles.-Please arrange for the dishwasher to be serviced or repaired as soon as possible.-Until the unit is restored to proper working order, the facility must use the manual dishwashing method with a chlorine sanitizer at 100 ppm to ensure effective sanitization.

      • Some of the food safety records are not updated. Please update and ensure they are maintained. Corrected during inspection. Food safety records help to monitor, take corrective steps to ensure that food process is done in a manner that makes the food safe to eat, and, a commercial food establishment must have written procedures designed to ensure its safe and sanitary operation and maintenance.

      • Dishwasher is not reaching the sanitizing temperature of 71C at the dish level. Please ensure the dishwasher is good repair until such time follow manual dishwashing procedure.
    • 22. Are utensils and equipment maintained in a condition and a manner that ensures the safe handling of food?
      • Couple of damaged utensils (sieve) consisting of a wire were observed to be in use. The damaged utensils were removed and discarded during inspection. Please check all utensils/equipment prior to start of the day. Replace/repair the damaged utensils/equipment should require. Damaged equipment must be removed from use.
