- Are written food handling procedures (Food Safety Plan) current and available on site?
- Observation(s): Staff was unable to direct me to the food safety plan at the time of inspection. Please review your food safety plan to ensure protocols are still inclusive of all potentially hazardous food products for food service. This includes sampling. Sampling protocol must facilitate minimal potential for customer contamination. A concern is present for cracker sampling as pieces are too small and cross-contamination risk is high via customers touching multiple pieces. Ideally, place into individual sampling cups, otherwise pieces must be large enough such that individual pieces are easily retrieved. Please submit a copy of your plan for review by the indicated date.
