    • 8 - Are equipment, food contact surfaces and utensils washed, sanitized and stored in a manner that removes/prevents contamination?
      • Observation(s): "Ostro San" QUATS ready to use sanitizer at over 500 ppm when label states 200 ppm for no rinse sanitizing and no test strips available to periodically confirm required strength. The use of leftover soft serve (a.k.a. "rerun") should be avoided to reducing reserving potentially hazardous food that have not been handled in ideal conditions. No dipper well for hard ice cream scoop, if scoop stored in water at room temperature than change the water at least every 2 hours along with washing and sanitizing scoop (e.g. spray sanitizer could be used, see attached Food Contact Surfaces.
