- Reviewed Manual three compartment dishwashing methods with Dillam Castillo, Manager and staff.Wash -> Rinse -> Sanitize (helped operator to measure at least 100 PPM chlorine sanitizer in 3rd sink with a bucket, soak washed and rinsed wares for at least 2 minutes) -> Air Dry afterwards.
- 14. Does the facility have an adequate supply of potable hot and cold running water and is the water sampled at required intervals?
- No hot water only cold water. Sheridan Lawrence Inn's boiler is waiting to be fixed and they have contacted the plumber to come and fix it. It has been 7 days without hot water. Copper Cookery across the hall is closed in the meantime. Drinks served in single use cup or cans. Contact undersigned PHI once boiler is fixed and there is hot running water at the facility.
