      • Observation: 1. Inappropriate equipment is used as scoops to obtain or move ingredients or product. Scoop handles must be kept free from the product to prevent hand contact and contamination. 2. Foods were left uncovered and open to contamination inside the walk-in freezer. Contamination of food from contact with objects, people, pests or chemicals can cause serious illness.
      • Corrective Action: 1. Use food safe scoops in place of bowls or other containers to transfer ingredients. 2. Ensure all foods inside freezer are covered.
    • 305 - Conditions observed that may allow entrance/harbouring/breeding of pests [s. 26(b),(c)]
      • Observation: Observed a large gap at the base of the wall below the dish pit that could allow pests (e.g. mice) to enter/harbour.
      • Corrective Action: Operator to seal any gaps in the kitchen that could allow pests to enter and harbour.

    • 306 - Food premises not maintained in a sanitary condition [s. 17(1)]
      • Observation: Walls around and across from the dishwashing area in the kitchen are damaged and have peeling paint. This condition makes them difficult to clean & sanitize as the surfaces are not smooth, impervious to moisture and durable. Also, the peeling paint may dislodge and contaminate foods.
      • Corrective Action: Walls around and across from the dishwashing area in the kitchen must be refinished to provide a surface that's smooth, impervious to moisture, durable, easy to clean and non-toxic.
