      • Observation: (CORRECTED DURING INSPECTION) Observed dough bins with dirt built up on the bottom placed on prep cooler cutting board. Cutting boards had noticeable build up of deep cuts with black debris which can cross contaminate food.
      • Corrective Action: Operator to clean and sanitize dough bins and replace cutting board. Operator to ensure they have a back up cutting board as well or that it is replaced at a greater frequency.

      • Observation: No dedicated hand washing sink available. Hand washing is an important practice to ensure food is protected from cross contamination from other previously handled foods or contact surfaces.
      • Corrective Action: Install dedicated hand washing sink with soap and paper towel in dispensers and hot and cold running water must be provided to facilitate proper hand washing.
