      • Observation (CORRECTED DURING INSPECTION): High temperature dishwasher available for mechanical ware washing, minimum sanitizing temperature of 71 deg C was not achieved.
      • Corrective Action(s): Dishes and utensils that were sanitized in high temperature dishwasher today are to be washed, rinsed, sanitized, and air dried in the three compartment method. Ensure that three compartment method of sanitizing is utilized until high temperature dishwasher can achieve minimum sanitizing temperature of 71 deg C on plate surface during final rinse cycle.

      • Corrective Action(s): - Service, repair, adjust, or replace high temperature dishwasher such that minimum sanitizing temperature (71 deg C) or concentration (50 ppm chlorine) can be achieved on plate surface during final rinse cycle
      • Recommendation: Purchase a water proof thermometer that can record maximum temperatures. Ensure that final rinse cycle temperature registers at or above 71 deg C on plate surface.
