      • Observation (CORRECTED DURING INSPECTION): Ukranian Sausage was out on counter at room temperature. 9 Degrees Celsius. Staff thought it was shelf stable. While saugage does have some additives to extend shelf life, it is not shelf stable and must be kept cold - < 4 Degrees Celsius. Moved to fridge.

      • Observation (CORRECTED DURING INSPECTION): Utensils kept in open bins on shelves, mouse droppings on shelves & in bins.
      • Discussed with staff - Utensils are run through commercial dishwasher before use. Replace open bins with rodent - proof containers for extra protection.
