    • 206 - Hot potentially hazardous food stored/displayed below 60 °C. [s. 14(2)]
      • Observation (CORRECTED DURING INSPECTION): Butter chicken sauce and chicken probed at 55C and 52C in the hot holding unit.
      • Asked staff when it was made. Staff indicated that they reheated by microwave this afternoon.
      • Staff state that they check temperatures at reheat, but was confused whether it is 64C or 74C.
      • Corrective Action(s): Sauce and chicken was reheated again by stove and microwave.
      • Please ensure reheating is done thoroughly. Please mix the food and ensure the internal temperature reaches 74C or higher.
      • Only one reheat is allowed.
      • Violation Score: 5
    • 306 - Food premises not maintained in a sanitary condition [s. 17(1)]
      • Observation: Ventilation hood guards still observed to be greasy.
      • Corrective Action(s): Please ensure the guards/panels are taken down, soaked, scrubbed, and run through the dishwasher.
      • This should be done on a routine basis to ensure grease do not accumulate.

    • 203 - Food not cooled in an acceptable manner [s. 12(a)]
      • Observation (CORRECTED DURING INSPECTION): Hot foods observed cooling in hot holding unit (unit is off).
      • Hot holding unit is an insulated unit and will prevent food from quickly cooling.
      • Food probed at 37C.
      • Staff stated they cooked the chicken at 12:30pm, inspection at 2:30pm.
      • Corrective Action(s): Cool foods uncovered at room temperature (occassionally stirring) for no more than 2hours. Once it is around 20-30C, place container in cooler. Food must then reach 4C within 4hours.
      • Educated staff, container of food placed in cooler.
      • Violation Score: 15
    • 209 - Food not protected from contamination [s. 12(a)]
      • Observation: 1. Ice machine observed to have discolouration and mildew growth, especially on the sides and lid of the inner compartment.
      • 2. Jars rimmed with icing and toppings observed placed in crates.
      • 3. Cakes/containers of food observed stored in walk in cooler/undercounter cooler/chest freezer uncovered.
      • Corrective Action(s): 1. Empty, clean, and sanitize ice machine.
      • 2. These jars should be treated as food. It must be fully protected from contamination. Crates aren't easily cleaned and sanitized. Crates also can't be fully closed/covered. Please acquire proper containers to place these pre-made jars.
      • 3. All food in coolers that is not in active use must be covered.

      • Observation: Soap not available for the handwashing station in the back.
      • Corrective Action(s): Simple pump dispenser must be placed at that station by tonight.
