- Observation (CORRECTED DURING INSPECTION): Hand sink in kitchen was supplied with stack of beverage napkins as single use paper towel for hand drying. A stack of brown leaflet single use paper towel was then supplied to replace the stack of beverage napkins, however there was no holder of sort to protect the paper towel from getting contaminated.
- Corrective Action(s): Ensure hand wash stations are supplied with single use paper towel that can be dispensed freely at all times to allow for proper hand washing to occur.

- Observation (CORRECTED DURING INSPECTION): Sanitizer in spray bottle tested > 200ppm of chlorine.
- Corrective Action(s): Staff immediately make the chlorine solution to be at 100 ppm. Chlorine sanitizer higher than 200 ppm can cause chemical contamination to the food. Always ensure to maintain the sanitizer in spray bottle at 50-100 ppm. (Recommend to obtain the chlorine test strip to check the chlorine level of the sanitizer)

- Observation: Black garbage bag observed in walk-in cooler storing bread. Staff stated the bread is received in the black garbage bag.
- Corrective Action(s): Discard the contents in the black garbage bag. DO NOT use black garbage bags to store food as the bags contain toxic chemicals which can leach into food. Store all food in food grade containers to prevent potential chemical contamination.

- Observation (CORRECTED DURING INSPECTION): 4 large garbage bags were observed in chest freezer and used for storing bread loafs. Staff stated that the bags were put in freezer on Monday (5 days ago). All bread loafs were in direct contact with garbage bags. As these bags may contain odour suppressing chemicals that could leach out and can cause chemical contamination of food, all 4 garbage bags containing bread loafs were discarded by staff during inspection:
- Garbage bag 1 had 12 bread loafs, Bag 2 = 9 bread loafs, Bag 3 = 15 bread loafs, Bag 4 = 9 bread loafs
- Total bread loafs discarded = 45
- Corrective Action(s): Only use food grade containers/ food grade material for food storage. DO NOT USE garbage bags for storing food products.

- Observation (CORRECTED DURING INSPECTION): Concentration of bleach in the sanitizer bottle recorded above 200ppm. Sanitizing food contact surfaces with high concentration of bleach can cause chemical contamination of food. Staff made fresh bleach solution and the concentration recorded at 200ppm.
- Corrective Action(s): To protect the food from potential chemical contamination, please use an approved food grade sanitizer at a safe concentration for washing and sanitizing the food contact surfaces. For example, bleach at 100-200ppm.

- Observation: One metal insert full of spaghetti and meat sauce was measured at 10.5C in the centre inside walk-in cooler. Staff stated clients or other staff members might heave gotten into the kitchen and took food which caused the lid on the spaghetti container to be fully closed instead of slightly ajar.
- Corrective Action(s): Since the spaghetti was stored in the wak-in cooler since the day before, it was discarded during inspection. Ensure all food items are cooled in shallow containers with lids slightly open to let out the heat.
