- Observation (CORRECTED DURING INSPECTION): Observation: Three bags of chicken wings observed in an empty cooler that was turned off (at ambient temperature). Surface temperature of the wings was approximately 7C to 10C, internal temperature below 0C.
- Corrective action: Bags of chicken were placed into the walk-in cooler at 4C or less. Ensure proper thawing practices are followed to limit the growth of potential pathogens (e.g. thaw at 4C or less).
