    • 22. Are utensils and equipment maintained in a condition and a manner that ensures the safe handling of food?
      • Overall, equipment was clean and in good working condition. Large pieces of equipment such as slicers, mixers, grinders, and tenderizers are taken apart and the components cleaned and sanitized.1- There is a hole (about 4" across) in the back wall of the large meat department walk-in cooler exposing the insulation behind it. Please cap or repair this hole so that the wall is easy to clean.2- The seal on the large meat department walk-in cooler is worn away on the bottom halt. This can allow cold air to escape the cooler putting strain on the condenser. Please have the seal repaired or replaced.
    • 23. Is the facility maintained in a clean and sanitary condition?
      • All departments, retail and storage areas were clean and well organized.1- Dust was building up in front of the condenser unit fans of the deli/bakery walk-in cooler. This dust can fall off on to foods, equipment and surfaces and should be cleaned regularly. This was corrected during the inspection by staff who immediately wiped down this area.
