    • F1.2 Are proper temperature controls maintained to ensure safe storage and display of foods?
      • Observation(s): 1. Gravy in hot holding unit recorded at 48 degrees Celsius with probe thermometer. Food in hot holding units must be kept at 60 degrees or hotter. The operator was instructed to reheat the gravy to 74 degrees Celsius prior to placing it back in the hot holding unit. Please ensure that the hot holding unit is capable of maintaining a temperature of 60 degrees Celsius at all times. Corrected during the inspection. 2. During hot holding, rice in the rice cooker was recorded at 22 degrees Celsius. The plug had fallen out of the outlet, and the hot holding unit was not functioning. The rice had been in the unit since the morning, and the employee on site discarded the rice. Corrected during the inspection.
