- Observed large bin in back kitchen area with frozen packages of vacuum sealed bacon. Operator was thawing to prepare for slicing. Product was still partially frozen. Advised all thawing should be done properly. Best practice is to start thawing process under refrigeration in the walkin cooler. Alternatively, rapid thaw by placing sealed packages into the sink and run cold running water to thaw.
