      • Observation (CORRECTED DURING INSPECTION): Following perishable items (potentially hazardous foods) were stored on teh top of the cooler:
      • -a container of white cheese @ 7.3°C
      • -a container of yellow cheese @ 7.2°C
      • -2 containers of diced meats @ 6°C
      • -a big container of white cheese @ 9.5°C
      • -a container of chopped onions @ 5.4°C
      • -a container of cut mushrooms was stored beside the cooler at room temperature. Internal temperature was measured at 14.9°C.
      • -Two ready to be cooked pizzas were planned to be stored in a rack without any temperature control until the order times, which was 50 minutes later.
      • Corrective Action(s): Store all potentially hazardous foods at 4°C or below.
      • The operator stated that the front pizza cooler is turned on at the beginning of the shift (around 9:50am) and turned off at the end of business @ 9pm. The cooler appears to be working properly; however, some potentially hazardous foods are not able to maintain the internal temperature of 4°C or below.
      • As such, portion above foods in a smaller amount in many containers. After using one up, bring the next container from the walk-in or under cooler @ 4°C or below. To reduce the time spent in the danger zone (5 - 59°C).
      • *Do not store chopped mushroom "next" to the cooler.
      • If the same issue persists in the follow-up, an enforcement action may be taken.
