      • Observation: Dishwasher used by the cafe and bakery does not have any sanitizer in the rinse cycle. As per bakery staff, when she tested it at 9am today, it had sanitizer in the rinse cycle. But the staff may have been using the wrong test strips; during the inspection she used the quats test trip to measure sanitizer levels of the dishwasher. The dishwasher uses chlorine sanitizer.
      • Corrective Action(s): Get the dishwasher serviced. Use the dishwasher in the prep kitchen until then. Educate staff on what type of sanitizer is used in the dishwasher and what test strips to use for testing. Recommend placing the appropriate test strips in a holder by the dishwasher.

      • Observation: None of the cafe staff could prove that they have Foodsafe Level 1 certification.

      • (1) Sanitizer in spray bottle and bucket measured less than 50ppm quats (2) Staff stated that cutting board is cleaned once a day
      • Corrections: (1) Sanitizer in spray bottle and bucket were replaced Ensure that sanitizer is changed out regularly and concentration is tested regularly using test strips (2) Wash and sanitize cutting board every 4 hours to prevent buildup of food debris and pathogen growth
      • Note: Quats sanitizer for food contact surfaces should be 200ppm

      • No staff on site had FoodSafe or equivalent certification
      • Corrections: Acquire FoodSafe certification. At least 1 staff on site must have FoodSafe certification when manager is not present. Keep physical copies of certificates on site for verification during inspection. Ensure adequate number of staff have completed FoodSafe level 1 to provide adequate coverage.

      • A few fruit flies noted around the dishwashing area. Accomulation of water noted under the dishwasher, which may contributed to a breeding site for fruit flies.
      • Corrective action: Maintain the area under the dishwasher dry and prevent accumulation of water and food debris that will allow breeding of pests. Contact the pest control company for additional service/treatment regarding fruit flies infestation.
