      • Mouse droppings were noted behind/beside a chest freezer in the kitchen and in the pop syrup room. Clean as discussed.

      • More than 200PPM quats (400PPM) was measured in the sanitizer spray bottle in the serving area. Staff remixed the sanitizer bottle. Ensure that the quat sanitizer is at a concentration of 200PPM.
    • 08. Do food handlers ensure that food is protected from contamination (unless noted elsewhere)(Non-Critical)?
      • 1. Flats of pop were stored on the floor in the kitchen. Ensure that all containers of food are stored at least 6 inches off the floor.2. A bicycle was stored in the kitchen across from one of the freezers. Store staff items in an area that is separate from food and food handling equipment.
    • 11. Are there adequate and properly operating dish washing facilities to effectively clean and sanitize equipment and utensils (unless noted elsewhere)(Critical)?
      • 0ppm sanitizer was measured in the final rinse cycle of the dishwasher. Repair the dishwasher. Ensure that 100PPM chlorine is measured in the final rinse cycle of the dishwasher and/or the dishwasher is sanitizing according to the manufacturers specifications.

      • Chlorine test strips were unavailable upon request. Purchase chlorine test strips.
