   • 10. Are food temperatures during storage and processing being controlled to maximize food safety?
     • There was no thermometer available to monitor and verify the temperatures of high risk food items. A thermometer was obtained during the inspection. Ensure that a thermometer is always available to monitor temperatures to keep high risk food items away from the temperature danger zone (between 4C to 60C).
   • 13. Are properly operating hand washing sink(s) accessible to food handlers, located in suitable areas, and stocked with appropriate hand washing supplies?
     • A temporary hand washing station was observed and lacked soap. Soap was obtained during the inspection. Ensure that that handwashing supplies are available at all times during an event.
   • 17. Are general nuisance conditions, other than those noted in other violations, being prevented at this special event vendor (Non-Critical)?
     • Booth did not have extra utensils to use. Extra utensils were obtained during the inspection. Ensure that there are extra utensils to use during events in case of contamination.
   • 21. Is refuse being managed in a suitable manner?
     • A garbage bag was observed tied to a tent pole.Operator was instructed to obtain an appropriate garbage container and was observed during the inspection. Ensure that garbage and refuse container that is durable, smooth, easy to clean, and non-porous.
