    • 04. Does the operator use approved methods for cleaning and sanitizing equipment, utensils, and surfaces?
      • Chlorine sanitizer solution was way too strong. Destroyed dye in testing strips. - Ensure to mix 1/2 teaspoon of unscented household bleach per liter of water. Chlorine sanitizer solutions must be used at 100-200 ppm.
    • 12. Are there adequate and properly operating dish washing facilities to effectively clean and sanitize equipment and utensils (unless noted elsewhere)(Non-Critical)?
      • A probe thermometer was not available to verify the dishwasher temperature at dish level during the sanitation cycle. - Please purchase a waterproof digital thermometer with a Max function in order to measure the temperature of the dishwasher during the sanitation cycle.- Temperature was measured at 73C.
