Accumulation of debris behind the ice machine and a gap surrounding the plumbing line behind the ice machine. 2. Gap along the stairway exterior door 1354.The facility is in the process of working with the University of Calgary to address/seal off entrance concerns.

- The hand sink by the soup area in the kitchen was taped off for use due to the plumbing leak on the main level. The hand sink can be used once the UC repairs the leak. Ensure the staff in that area is using the other hand sinks in the kitchen for hand hygiene.

- One spray bottle in the front service area was measured at 100 ppm. - Please ensure Quat sanitizer solutions are used at 200 ppm. Change at adequate intervals and verify concentration daily.

- No sneeze guard for the self-serve sauce station. - Provide sauces in squeeze bottles or pre-portioned cups with lids. All foods must be adequately protected from customer/guest contamination.

- Several paper towel rolls were found on surfaces in the front service area. The paper towel dispenser at the grill station was in disrepair and not dispensing paper towel. - Ensure all paper towels dispenser are functional and do not store paper towel rolls anywhere other than dispensers to protect from contamination.

- Several flies were observed on walls in the dishwashing room and the utility closet. - Contact your pest control company and implement effective measures to control and eliminate the presence of flies in this area. Drains must be treated regularly. Though, there were less flies observed than previous inspections, this issue has not been addressed.

- Dishwasher temperature was measured above 71C but observed a couple of dishes that did not come out clean. - Please ensure they are adequately cleaned/sprayed/scrubbed prior to running them through the dishwashing machine.

- The temperature of food items stored in salad cooler (#55) in the front service area was measured between 12-15 C. - Food items were placed in another cooler. - Please fix. All perishable foods under refrigeration must be stored at a temperature of 4C or lower.

- 1) No cold water available at the bakery department's handwashing sink due to a leak. - Please fix. All handwashing sinks must be supplied with hot and cold running water. Operation of handwashing a sink in a food facility is critical and must be fixed immediately when there are issues. 2) No paper towel available at the catering handwashing sink at the time of inspection. - Corrected during inspection. Please refill immediately after running out.

- Dishwashing area requires more frequent cleaning/sanitiation:- Kitchen equipment and utensils were left unwashed from the night before. - Water pooling on the floor in dishwashing room from the night before. - Water used for soaking plateware and utensils was extremely dirty. To be changed more frequently. - A significant number of flies observed on walls in the dishwashing room. - Please clean more frequently and maintain in a sanitary condition.
