      • Sanitizer solution was concentrated bleach. When testing the solution, it was over 200 ppm. - Have sanitizer solutions available at 100 ppm for chlorine solution. Use test strip to test the concentration of the sanitizer solution.

    • 10. Are food temperatures during storage and processing being controlled to maximize food safety?
      • Inspection conducted after a planned 13-hour power outage. Facility was without power at the time of inspection. Power was projected to be restored at 8:00 PM which would result in a 26-hour power outage. Lots of foods left out in coolers and freezer – Coolers must be discarded. Some items freezers showed signs of thawing. Some items were still fully frozen. Temperature could not be verified by the time power would be restored and these items should be discarded as well. Facility manager to follow-up with the facility as access to the building was restricted at the time of inspection due to the ongoing work.

      • The chlorine sanitizer solution in bucket was measured at 0 ppm. Chlorine sanitizers must be used at 100 ppm. Mix 1/2 teaspoon of household unscented bleach per liter of water. Verify the concentration using chlorine test strips.- Corrected during inspection.
    • 12. Are there adequate and properly operating dish washing facilities to effectively clean and sanitize equipment and utensils (unless noted elsewhere)(Non-Critical)?
      • No chlorine test strips available. - Please purchase chlorine test strips and use to verify the concentrations. Chlorine sanitizers must be used at 100 ppm.
