      • Observation (CORRECTED DURING INSPECTION): Staff was observed placing freshly cooked mushrooms that were on a shallow sheet pan inside the walk-in cooler. Steam was observed rising from the mushrooms at the time of inspection. Staff said mushrooms were cooked 5 minutes ago.
      • Corrective Action(s): Food must be properly cooled from 60C to 20C in 2 hours, and from 20C to 4C to prevent the growth of pathogens that lead to foodborne illness. Placing freshly cooked food inside the walk-in cooler will increase the temperature of the surrounding foods inside the walk-in cooler.
      • Staff removed the mushrooms from the walk-in cooler, and allowed the mushrooms to cool for an hour prior to placing it inside the cooler.

      • 205 - Cold potentially hazardous food stored/displayed above 4 °C. [s. 14(2)]
      • Observation (CORRECTED DURING INSPECTION): 4 baked potatoes were found inside a drawer across the cook station. Internal temperature is 21.5C. Staff said baked potatoes were made last night.
      • Corrective Action(s): Ensure potentially hazardous foods are stored at 4C or less to prevent the rapid growth of bacteria and/or formation of toxins that could lead to foodborne illness. Staff discarded the baked potatoes.

      • Observation (CORRECTED DURING INSPECTION): Vegetable slicer was observed to have food debris along the blade. Staff said the vegetable slicer was used last night.
      • Corrective Action(s): Clean and sanitize the vegetable slicer at least every 4 hours throughout the day as well as at the end of the day. Bacteria can multiply rapidly on the slicer, which may lead to foodborne illness. Staff immediately dismantled and cleaned and sanitized the slicer.

      • Observation: Boxes of alcoholic beverages were found inside the walk-in cooler by the bar station
      • Corrective Action(s): Food must be stored at least 6" (15 cm) off the floor. This facilitates proper cleaning and minimizes the chance of pests contaminating the food.

      • Observation: 1. Lots of flour was observed on the walls, floors along the walls, and on the racks inside the dry storage room.
      • 2. Stand-up cooler next to the walk-in bar cooler was observed to have a pooling of brown liquid on the bottom shelf and an odour was observed upon opening the cooler door. No food/drink products were stored inside the stand-up cooler at the time of inspection. Management said that they plan on removing the stand-up cooler from the premises
      • Corrective Action(s): 1. Remove any buildup in the areas mentioned above to ensure premises is maintained in a sanitary condition and to avoid attracting pests.
      • 2. Clean and sanitize the stand-up cooler to prevent the attraction of pests.

      • Observation (CORRECTED DURING INSPECTION): No soap or paper towels available at bar sink at the beginning of service.
      • Corrective Action(s): Liquid soap, paper towels and running hot and cold water is required at all hand washing sinks to ensure staff hands are properly washed during service. Dirty hands can contaminate food and utensils.

      • Observation (CORRECTED DURING INSPECTION): Bulk bin containers now have dedicated scoops. Some of the scoops are buried under the bulk product and the handles are now covered with food.
      • Corrective Action(s): Ensure the store the scoops in a manner so it does not contaminate the staff's hands. The new scoops are good and just need to be stored properly.

      • Observation: Temperature gauges for wash and rinse cycle of commercial dishwasher do not work. The rinse cycle indicates temperature of 50C when it was detected at 71.2C at the plate. The temperature test was conducted 3 times and the temperature is incorrect on the gauge.
      • Corrective Action(s): Repair this unit to ensure an accurate reading to ensure proper sanitization of dishware. In the mean time, use a manual dishwasher thermometer to test every shift. A minimum of 71C at the plate (inside the dishwasher) is required to ensure a safe service.
      • Repair required in one week.

      • Corrective Action(s): 1. Do not double stack food containers without lids or covers.
      • 2. Food scoops are on order with Sysco. Operator indicates they will arrive next week.

      • 3. Observed garlic and cheese containers double stacked in walk in cooler (CORRECTED AT TIME OF INSPECTION).
      • Corrective Action(s): 1. Use food grade containers with lids or covers to store bulk food items.
      • 2. Use clean dedicated scoops with handles to dispense food. The scoops should be stored in a sanitary manner which prevents contamination of food, such as a dedicated scoop container next to or on top fo the bulk bins. Correction required in two days.
      • 3. Do not double stack foods without proper lids or food covers.

      • Observation: Fruit flies observed near the bar area and dry storage area.
      • Corrective Action(s): Ensure to keep storage foods in food grade containers with lids to prevent growth of fruit flies. Clean and sanitize food contact services and clean food spills as soon as possible. Wash and sanitize sinks and drains daily as they may be fruit flie harbourage areas.
