- Observation (CORRECTED DURING INSPECTION): Hot-holding unit holding gravy and corn was 'turned-off' at time of inspection. Food temperatures were at ~40 Celsius at time of inspection. Employee turned the heat on while the food temperatures were being checked.
- Corrective Action(s): Hot-hold units must not be used to cook or reheat foods. These units are intended to be used to hold food temperatures above 60 degrees Celsius only. All foods placed into the hot-holding units must be cooked/reheated to a minimum temperature of 74 Celsius before being placed into the unit.
