- 10. Are food temperatures during storage and processing being controlled to maximize food safety?
- The display cooler in the cafeteria was measured at 5.6°C. High-risk foods were moved to a different cooler until repairs are completed. Please ensure all coolers are maintained at or below 4°C to prevent the growth of harmful bacteria. Freezers were measured to be below -18C.Hot holding units were kept above 60C.

- The high-temperature dishwasher did not reach the required 71°C. The operator indicated that they will attach the iodine pail to the dishwasher so it dispenses sanitizer effectively and can properly sanitize dishes.The operator has submitted a requisition for the dishwasher repair and will contact the PHI once it is fixed.Three compartment sink also available.

- 04. Does the operator use approved methods for cleaning and sanitizing equipment, utensils, and surfaces?
- QUATs sanitizer concentration was measured above 200 ppm in the sink. -Staff complied to make a new solution concentration measured at 200 ppm. Staff will check with Diversys of the dispensing unit due to the high concentration of the solution. Test strip available on site was expired.-Staff procured a valid test strip and ensure to test the validity of solution concentration using the test strips

- Raw eggs in the shelving unit in the walk-in cooler was observed to be on the top of produce food which can contaminate any food underneath. -Staff complied to remove food items under the raw eggs. Please ensure to segregate all food - no ready to eat or produce food under raw food/meat.
- 08. Do food handlers ensure that food is protected from contamination (unless noted elsewhere)(Non-Critical)?
- Scoops were observed to be submerged in bulk food supply. One scoop found to be broken and has cracks which broken pieces can get into the food supply. -Staff complied to remove all scoops and was placed on the top of the lid and outside of the product container. The broken scoop was immediately discarded.

- No pest infestation noted throughout the facility. Pest control measures were observed eg. pest boxes. However, no monthly records of the pest control management. Please ensure to keep monthly records of same.
