      • Observation: Utensils not being cleaned/disinfected after use. (ie: tongs/knives noted soiled with food debris) Wiping cloths not properly stored in a sanitizer - too many cloths noted.
      • Corrective Action(s): Ensure all food contact surfaces/implements are washed/disinfected after use. Items must be kept clean during storage. Wiping cloths, used on food contact surfaces, must be stored in a sanitizer at all times. Limit the amount of cloths noted on site.
