- Observation: Inadequate sanitizing solution. Sanitizer (QUAT) used for sanitizing equipment was measured at 100 ppm. Sanitizer for manual dishwashing must provide a minimum concentration of 200 ppm QUAT solution to limit pathogen growth on food contact surfaces.
- Corrective Action: Operator to ensure sanitizer (QUAT) can reach 200 ppm or use other approved sanitizing method.
- 401 - Critical Adequate handwashing stations not available for employees [s. 21(4)]
- Observation: (CORRECTED DURING INSPECTION) No soap in dispenser at the handwash sink. (Public Health Significance) Hand washing is an important practice to ensure food are protected from cross contamination from other previously handled foods or contact surfaces.
