      • 1.) No soap available for manual warewashing in the ddishwashing area nor the premises.
      • 2.) Knives and meat slicer (detachable parts) were not being propperly sanitize.

      • CORRECTIVE ACTIONS
      • 1.) Purchase soap (dishwashing) and use it to wash and clean diswares.
      • 2.) After washing and rinsing the dishwares, sanitize the dishwares by soaking it into bleach solution for 2 minutes.

      • > Purchase an additional sink plug.

      • Operator indicates the machine is no longer in use
      • Corrective Action(s): Remove the machine from the premises if it is no longer in use

      • Corrective Action(s): You must be Washing with detergent, rinsing, then sanitizing with bleach as per the Manual Wash signs posted and your Sanitation Plan.
      • Obtain Chlorine Test Strips to monitor your sanitizer solutions ensuring >100ppm concentration
