- Lemon-scented bleach was observed on-site; however, scented bleach is not approved for sanitizing food contact surfaces. Only plain, unscented bleach may be used. To prepare an appropriate sanitizing solution, mix ½ teaspoon of unscented bleach per 1 litre of water.

- This mobile unit falls under a category that permits only low-risk activities such as dispensing beverages and using utensils for pre-portioned foods. In these cases, hand sanitizer and access to a handwashing sink (including a temporary setup) are acceptable.However, during the inspection, the operator was observed cutting licorice garnish, which constitutes food preparation and exceeds the scope of the approved permit. If food preparation is to occur, a fully operational handwashing sink must be available and in use. Please ensure operations align with the approved permit classification and that appropriate hand hygiene facilities are in place. If you wish to change your permit class to allow for food preparation, please let us know.

- Very limited paper towel was available at the hand sink. No extra paper towel was available in the truck. The operator was able to find extra paper towel at the event. Please ensure the hand sink is always stocked with liquid hand soap, paper towel, and running hot/cold water.

- The mobile is permitted to be operated as a type A mobile - pre-packaged foods only. The operator was preparing cut citrus garnishes and serving hot apple cider and slush beverages. To be able to conduct minimal food handling the mobile must meet a higher level of mobile or only pre-packaged foods and pre-prepared low-risk drinks that are dispensed through a tap or spout from a sealed container can be served.
