      • Observation (CORRECTED DURING INSPECTION): Single compartment sink at the coffee bar is being used for warewashing.
      • Corrective Action(s): This sink must be used as a dedicated handwash station for the new coffee and ice cream sale additions. Ensure it is supplied with liquid soap and paper towels at all times.
      • Do not use this sink for major warewashing. All warewashing must occur at your dedicated warewashing sinks (2 compartment or 3 compartment sinks).

      • Corrective Action(s): Staff dumped out all standing water at the time of inspection (mop bucket, and catch buckets under the 3 compartment sink).
      • > Do not allow soiled/dirty waste water to accumulate overnight. Still water may act as breeding grounds for pests.
      • > Clear the drains and pipes by pouring hot water down at the end of each day.
      • > Obtain sticky traps as necessary. Do not use aerosol spray within the facility.

      • Observation: Significant grime build up in the mop sink and on the surrounding floor. There is a constant flow of water being dumped into the mop sink from the walk-in freezer compressor unit above. This is creating a constantly wet and warm area.
      • Corrective Action(s): The mop sink must be adequatly cleaned on a regular basis. Keep the surrounding area as dry as possible to prevent attracting pests and possible mould growth.

      • Observation (CORRECTED DURING INSPECTION): Bleach solution for the front of the house measured 50ppm chlorine. Required range is 100-200ppm.
      • Corrective Action(s): Operator adjusted the solution to measure 100ppm chlorine. Do not mix a full bottle of solution; make only half of a bottle to keep the solution fresh. Obtain chlorine test strips to verify the concentration at the start of each day and remake if it falls below 100ppm.

      • Observation: Cleaning for general debris and dust is required under the 2 compartment sink in the front area, between the cabinets, and under the prep table in the back.
      • Corrective Action(s): Clean and sanitize the premises as per your sanitation plan. General cleaning is done once a week as per operator. Ensure the hard to reach areas are addressed.

      • Observation: Traces of water leak observed on ceiling tiles. One tile observed having black stains appears to be mold. No water leak noted on food stored below the leak area. Operator is aware of the issue. Operator stated that landlord has been contacted today to repair the water leak.
      • Corrective Action(s): Move away food packages and bags from under the leak area. Ensure to store food protected. Discard bags that have sign of water damage.
      • Replace ceiling tiles damaged by water leak with new clean ceiling tiles. Ensure to use PPE cleaning area. Clean light covers.

      • Observation (CORRECTED DURING INSPECTION): Door handles on the deli meat display cooler and preparation cooler were filthy.
      • Corrective Action(s): Door handles need to be kept clean to prevent cross contamination. Operator cleaned and sanitized the handles at time of inspection.

      • Observation: Baked bread and croissants not protected from potential contamination by customers while on display.
      • Corrective Action(s): Foods displayed for purchase shall be protected from potential contamination with either a cover or sneeze guard. At time of inspection operator had a small tray of croissants and about 12 loaves of bread on display but not protected from potential contamination by customers standing in front of them. Discussed various options with operator including obtaining a sneeze guard or storing the products away from the customer service area. Operator decided to utilize the unused display cooler as third option to display/store baked products. Operator will clean the display cooler and transfer baked products to it later today.

      • Corrective Action(s): Mildew build up in the mop sink can create a harborage area for flies and filth/grime on the walk-in cooler/freezer doors can contaminate hands and other items that may come in contact with it. Clean all identified areas to keep them clean on a regular basis.

      • Observation (CORRECTED DURING INSPECTION): Individually pre-packaged cheese stored above 4 degrees Celsius.
      • Corrective Action(s): Baby belle cheese was found in a display cooler (across from bread slicer) that was at 20 degrees Celsius. Operator said the cooler is meant primarily for storing sweet baked goods (i.e. cookies, brownies, etc.) and intentionally adjusted the temperature higher than 4 degrees Celsius for improved quality of the sweet baked goods. Informed operator that cheese must be stored at 4 degrees Celsius or less unless otherwise indicated by the manufacturer. Instructed operator to discard cheese as it had been stored in the display cooler for 1 month.

      • Observation (CORRECTED DURING INSPECTION): Croissants were not covered to prevent contamination.
      • Corrective Action(s): Croissants in service area shall be sufficiently covered to prevent contamination from customers standing at the front service area. Operator placed a cover over the croissants.

      • Observation (CORRECTED DURING INSPECTION): White cutting board was found to have excessive wear from daily use.
      • Corrective Action(s): Informed operator that plastic cutting boards with excessive wear shall be discarded as they are more difficult to properly clean and santiize. Instructed operator to discard the worn out cutting board and to use the extra cutting board that was in storage. Also discussed with operator to thoroughly wash and sanitize cutting boards after each use to prevent build up of filth/grime or mildew.

      • Observation (CORRECTED DURING INSPECTION): Walk-in cooler temperature was found to be 7-9 degrees Celsius. The Thermometer in the cooler was also showing approximately the same temperature.
      • Corrective Action(s): Walk-in cooler shall be capable of maintaining foods at 4 degrees Celsius or less. Operator adjusted thermostat at time of inspection. Discussed with operator about monitoring cooler temperatures on a regular basis.

Monitor for rodent droppings everyday and clean up any droppings found immediately. If new droppings are found, this indicates an active rodent infestation.
