Health authorities word their violations differently, so we group them by what they mean for food safety. Higher-risk findings are the ones inspectors treat as critical, because they can directly make someone sick.
Cleaning and sanitizingHigher risk
Anything that touches food, such as cutting boards, dishes and utensils, must be washed, rinsed and sanitized. Inspectors check dishwasher temperatures, sanitizer strength and how wiping cloths are stored. Poor sanitizing lets bacteria survive from one use to the next.

- Yes (corrected during inspection) - note that the QUATs sanitizing spray bottle used at the main kitchen was of very low sanitizer concentration (must be at minimum of 200ppm QUATs). There may have been an issue with the QUATs sanitizer solution set-up at the mounted supply in the rear storage room.A new batch of chlorine sanitizer was created, with spray bottle emptied and then re-filled at 100ppm chlorine sanitizing concentration (use of chlorine bleach and water dilution). Test strips for chlorine and QUATs were available.
