- 06. Are appropriate food handling practices and plans in place to ensure that food is handled in a manner that makes it safe to eat?
- No - staff are to use and complete a daily recording of the monitoring of food safety temperatures (with copy of the AHS 'daily food safety checklist' provided to operator by email, for review and use as necessary).
- 11. Are there adequate and properly operating dish washing facilities to effectively clean and sanitize equipment and utensils (unless noted elsewhere)(Critical)?
- No - utensils and food equipment were being washed in the hand-wash sink at the food prep area at the rear store area. Note that all manual washing, rinsing, and sanitizing of utensils, plates, food equipment, etc., must be conducted in a 2-compartment sink, with hot and cold running water under pressure (minimum hot water of 45 degrees Celsius). The staff are to use the set of 2-compartment sinks available at the opposite side of the store (with available hot and cold running water - with detergent and chlorine bleach sanitizer available for use).Note: the AHS '2-compartment sinks procedure' sticker was provided to staff for review and posting at the manual washing area.
- 13. Are properly operating hand washing sink(s) accessible to food handlers, located in suitable areas, and stocked with appropriate hand washing supplies?
- No - there was no hot water at the hand-wash sink in the food prep area at rear of store. Note that all hand-wash sinks must be supplied with hot and cold running water under pressure, and with a supply of liquid soap and paper towels. The operator is to ensure a hot water tank/system is installed to provide hot water at this hand-wash sink.
- 16. Is the facility free of unapproved animals, vermin and/or insects (unless noted elsewhere), and maintained to prevent the entry or harbourage of pests?
- No - there were no pest control reports or recent pest control service/monitoring. Also, there was one (1) dead 'fresh' mouse observed in a metal rodent trap directly at the rear exit door in the southwest area of the store (indicative of mouse entry upon delivery door opening). There were no observed issues of required vermin-proofing of the food premises. The operator is to ensure there is regular monthly pest control service, whether by a licensed pest control company (monthly contract) or staff use and completion of the AHS 'monthly pest control checklist' (with copy to be provided to operator by email, for review and use as necessary).
