    • 12. Are there adequate and properly operating dish washing facilities to effectively clean and sanitize equipment and utensils (unless noted elsewhere)(Non-Critical)?
      • Sanitizer test strips are not available. Test strips must be available for any sanitizers used in the kitchen. If using bleach then obtain chlorine test strips capable of measuring at least 50-200ppm.A residential dishwasher has been installed in the kitchen. A commercial dishwasher is required for commercial cooking. Either the dishwasher must be replaced with an appropriate model, or signage must be attached to the dishwasher that is only for class use.
    • 13. Are properly operating hand washing sink(s) accessible to food handlers, located in suitable areas, and stocked with appropriate hand washing supplies?
      • Not all handwash sinks have paper towels and liquid soap dispensers installed. Work was underway during the inspection on finishing items such as this. Ensure dispensers are installed and stocked before beginning any food handling.
    • 16. Is the facility free of unapproved animals, vermin and/or insects (unless noted elsewhere), and maintained to prevent the entry or harbourage of pests?
      • Pest monitoring is not occurring. Even when pests are not evident a pest monitoring program is required in all food facilities. Implement a pest monitoring program. A sample pest control checklist will be provided with this report.
