      • No sanitizer bucket was available and cleaning cloths were being reused.Fresh quat sanitizer solution was prepared and measured 200 ppm.Cleaning cloths intended to be reused must be frequently cleaned and stored in a sanitizing solution at the correct concentration to prevent the growth of harmful microorganisms.

      • A sink and surface test strip was used to check the glass washer with iodine sanitizer.-Iodine test strips were available.Please train your staff on the appropriate testing equipment for the glass washer.
    • 22. Are utensils and equipment maintained in a condition and a manner that ensures the safe handling of food?
      • 1) Ventilation canopy filters were accumulated with grease deposits and other residues.-Clean and sanitize the ventilation canopy filters on a weekly basis.2) Cutting boards surfaces had deep grooves and insanitary.-Resurface or replace cutting boards.
