      • Observation: The following were observed at the time of inspections
      • 1. Grease build up and grease dripping from the grease traps inside the mechanical ventilation, inside the burger cooking area
      • 2. Grease accumulating on the floor in front of the deep fryer. This presents a safety hazard. Grease may also contaminate ready to eat food.
      • *Ensure grease traps are cleaned on a regular basis, they may be ran through a dishwasher
      • *The floor requires thorough cleaning around equipment and on a regular basis.

    • 302 - Equipment/utensils/food contact surfaces not properly washed and sanitized [s. 17(2)]
      • Observation (CORRECTED DURING INSPECTION): All 3 sanitizer pails had less than 50 ppm chlorine during the time of inspection; Sanitizer pails had 2 hour time strips and were made within 10 minutes at the time of inspection. Operator reported that sanitizer pails are made with chlorine pills
      • Corrective Action(s): All three sanitizer pails were discarded and fresh solution were made according to the manufacturers instructions on the chlorine pill packaging. Always test final solution with chlorine test strips to ensure chlorine concentration is at 100ppm. All three sanitizer pails tested to be at 100ppm after new solutions were made during the time of the inspection. Sanitizer pails must be exchanged every 2 to 4 hours and must be at 100ppm chlorine for proper sanitizing of food contact surfaces

      • Observation: Time on machine that prints time stamp stickers for room temperature holding of fresh cut vegetables for burgers is ahead by just over an hour which then appears to give the food that's intended to be held out for 2 hours (then discarded) for just over 3 hours.
      • Corrective Action(s): Adjust clock on machine to prevent food being held out at room temperature longer than the allowed 2 hours. Due: today.

      • Observation: Cleaning outlined in last report mostly done however not fully done. Observed grease build-up in the McCafe area under fixed counter units at the back (observed dirt/grease build-up with lots of candy/m&ms scattered at the back). Grease building up again behind the grill for the chicken breast, staff stated this could be due to in part) that the grease catchment tray doesn't go all the way back).
      • Corrective Action(s): Give McCafe floor under fixed counter units a deep clean (especially at the back near the wall) and see about adjusting the grease drip tray on the chicken grill (alternatively, increase cleaning frequency in this area). Due: 1 week.

      • Observation (CORRECTED DURING INSPECTION): Two metal ice cups in the McCafe area used for storing/rinsing spoons for drinks had no ice left and water was room temperature.
      • Corrective Action(s): Water/ice bath must be changed regularly before all the ice completely melts to prevent bacterial growth in water which can contaminate spoons/drinks.

      • Recommend installing a barrier/shield under front of soft serve ice-cream machine to deflect strong blasts of air that push cups, debris, etc under equipment.
