      • - Temperature logs (since Sunday) indicated cooler has been consistently above 4C.
      • Corrective Action(s): - Operator discarded foods. Salad kits and tuna salad made less than 2 hours ago were moved to a working cooler.
      • - Cold potentially hazardous foods must be stored at 4C or colder.

      • Observation (CORRECTED DURING INSPECTION): Handsink (by hot food case) blocked by broom and dustbin.

      • Observation (CORRECTED DURING INSPECTION): Five packages of frozen food observed stored on the counter in the deli area. Items observed still frozen. Staff placed date stickers on the packages and placed the packages of food into the cooler during inspection.
      • Corrective Action(s): Do not thaw foods on the counter at room temperature. All frozen foods must be thawed using an approved method (E.g. under running water, in a water bath or under refrigeration).

      • Observation: Observed some food and debris build up in the following areas:
      • - floor next to rotisserie chicken ovens
      • - floor in corners of deli walk in cooler
      • - some mold on risers in walk in cooler
      • - behind dishwasher
      • Corrective Action(s): Give above noted areas a deep clean. Due: 1 week.

    • 206 - Hot potentially hazardous food stored/displayed below 60 °C. [s. 14(2)]
      • Observation (CORRECTED DURING INSPECTION): Main hot holding display case at 51C during inspection, staff inspected unit and found it had been turned off and suggested that it was accidentally turned off as the power button is at a height that is easily bumped. Temperature logs for unit stated that unit was at 71C three hours ago, unit turned on again and reached 60C during inspection.
      • Corrective Action(s): Ensure all hot holding units are consistently able to hold hot foods at 60C or above. Recommend putting in a guard to prevent on/off switch from being bumped accidentally.

    • 315 - Refrigeration units and hot holding equipment lack accurate thermometers [s. 19(2)]
      • Observation (CORRECTED DURING INSPECTION): Three probe thermometers stored at room temperature (~23C) all read approx 4C. Thermometers had both Celsius and Fahrenheit readings on them and could have been confused during last calibration.
      • Corrective Action(s): Ensure these are properly calibrated to ensure accuracy.
