      • -The temperature of the high-temperature dishwasher was measured at 52.5°C, 65.8°C, and 66.8°C. Staff will be sanitizing dishes manually until the dishwasher is fixed. Ensure to take one of the following actions:1) If using a high-temperature dishwasher, ensure the temperature reaches at least 71°C (use a waterproof thermometer).2) Alternatively, sanitize dishes manually by soaking them in the sanitizer and allowing them to air dry (100 ppm if using chlorine).2) If using a low-temperature dishwasher, ensure the appropriate sanitizer is used for disinfection.
