      • The sanitizer solution in the cleaning cloth bucket measured 0 ppm of quaternary ammonium compounds (quats). The operator replaced it with a fresh bucket of sanitizer from the main source, which measured 200 ppm, meeting regulatory requirements.
    • 08. Do food handlers ensure that food is protected from contamination (unless noted elsewhere)(Non-Critical)?
      • Scoops were found inside the flour and sugar containers. The operator promptly removed them and placed them in their designated holders.Unopened bags of flour were observed lying on the floor in the storage area. The operator transferred the flour into the designated container and explained that the bags were part of a recent inventory delivery.

      • The dishwasher gauge stated that the rinse cycle was 177F. The temperature measured in the dishwasher was 69.6C. The temperature did not meet 180F at the manifold or 71C at the plate for proper sanitation of the dishware.
    • 19. Does the facility have a valid permit and does the facility operate in compliance with the conditions of that permit, or is the facility awaiting approval prior to operation?
      • The permit posted expired September 2024.
